Mussels with Tomato, Garlic, Oregano and Fennel

1 packet of Kinkawooka Shellfish Mussels
1 tablespoon of olive oil
1 brown onion
2 clove of garlic
1 tin of tomatoes
1 punnet of cherry tomatoes
1 fennel bulb
Splash of Pernod
Pinch of dried Oregano
Bunch of fresh Parsley
Bunch of fresh Dill
4 anchovies fried off
1 tablespoon of tomato paste
1 cup of white wine
Directions
- Chop onion and garlic and fennel
- Saute until softened
- Add anchovies
- Add tomatoes, tomato paste and white wine
- Add the mussels
- Cover for till they open, remove one by one when opened
- Garnish with Parsley, Dill
Notes
- *You can also add some fried tofu to soak up the juices
- *If the tomato flavour is too acid, add a bit of sweetness
