Mussels with Tomato, Garlic, Oregano and Fennel

Ingredients

  • 1 packet of Kinkawooka Shellfish Mussels

  • 1 tablespoon of olive oil

  • 1 brown onion

  • 2 clove of garlic

  • 1 tin of tomatoes

  • 1 punnet of cherry tomatoes

  • 1 fennel bulb

  • Splash of Pernod

  • Pinch of dried Oregano

  • Bunch of fresh Parsley

  • Bunch of fresh Dill

  • 4 anchovies fried off

  • 1 tablespoon of tomato paste

  • 1 cup of white wine

Directions

  • Chop onion and garlic and fennel
  • Saute until softened
  • Add anchovies
  • Add tomatoes, tomato paste and white wine
  • Add the mussels
  • Cover for till they open, remove one by one when opened
  • Garnish with Parsley, Dill

Notes

  • *You can also add some fried tofu to soak up the juices
  • *If the tomato flavour is too acid, add a bit of sweetness
